The restaurant of Hilton Garden Inn Ufa Riverside started to sell self-produced delicacies

To meet the festive winter evenings, the restaurant prepared long-cooked sausages using original recipies, “salami Milano” and “salami Napoli”. The delicacies stay in the dry ager for 2,5 months, then they get the quality certificate and are sold together with the traditional local meat specialties. The sausages can also be purchased from the Shop minimarket near the reception.

Meat ageing is one of the oldest meat treatment techniques. The dry ager enables strict control over the temperature and air humidity in order to create special micro-climate. During the ageing process the enzymes in the meat launch the chemical processes, which soften fibers and shape the taste and rich aroma, the temperature and humidity contain the spread of bacteria and mold. Hence, the meat develops untold taste and the softest texture and is a treat for real gourmets.
